If I was ever in a position where I would have to choose a last meal …
and no, this isn’t a confession of some future malfeasance.
Trust me, I never, ever, ever plan to find myself in a last meal situation. I’m a rules follower kind of gal. But for the purposes of this blog post, let’s play last meal.

Now it seems like most last meals consist of steak, hamburgers and fried foods. There’s actually a study from Cornell University that confirms it.

But for me? Well my go-to last meal woud be carbs, carbs, and more carbs. A heaping plate of carb-filled beige foods. Pastas and breads. Throw in some cheese (mozzarella is a favorite of mine) and cherry tomatoes and I’m in heav …

Perhaps not the correct turn of phrase to use when discussing last meals. 😉
But this super easy-to-make tortellini pasta salad featuring Trader Joe’s marinated mozzarella balls, Trader Joe’s Balsamic Glaze and cherry tomatoes would 100% be on my last meal list.
Tortellini Caprese Salad Recipe
Ingredients
- 10 oz Tortellini
- 12 oz Trader Joe's Marinated Mozzarella Balls
- 6 oz Cherry Tomatoes, Halved
- 1/2 cup Red Onion, Chopped
- 1/2 Cucumber, Peeled & Quartered
- 1 tbsp Trader Joe's Balsamic Glaze
- Fresh Basil
- Salt & Pepper
Instructions
- Cook tortellini according to package instructions. Rinse with cold water & drain.
- Cut mozzarella balls in half. Reserve marinade for dressing.
- Cut cherry tomatoes in half. Peel cucumber and cut into quarters. Chop red onion. Chop basil.
- Combine pasta, mozzarella, cherry tomatoes, cucumbers, red onions and basil in a bowl. Pour in half of mozzarella marinade to coat. Add salt & pepper to taste.
- Top with balsamic glaze and fresh basil.
- Refrigerate before serving.
