Weight Watchers Cucumber Salad with Pickled Onions

 
I planned to publish this recipe last week. Accompanied by a silly, light-hearted, and (dare I say) vapid story. But it didn’t feel right. Or, more accurately, it didn’t feel like the right time for a silly, light-hearted (vapid) story.
 
 
And then …  for all of a nanosecond … I debated discussing the election. I quickly shot that idea down. I don’t want to go there. And you don’t want me to go there. Let’s face it, you don’t come here for that. You come here for a distraction from all that!
 
 
And then … for all of two nanoseconds … I debated discussing the Chicago Cubs win.  And how it seemed sad that the election quickly eclipsed their celebration. But then I shot that down idea, based on some excellent advice from my husband.
 
 
So for today … for one day only … I’m going all Seinfeld on you all. And this blog post is going to be about nothing. Well, not exactly nothing. It is about a zero point Weight Watchers Cucumber Salad with Pickled Onions recipe.

    It looks excellent, but I can’t do raw onions anymore. (sad face) DL was in Chicago on Saturday and he said he saw snow!!
